Autumn Granola
This recipe came to us care of our buddy Darcey from the Firefly Adventure Team. It’s a healthy seasonal treat that’ll sweeten up your mornings without the sugar-filled fake pumpkin flavor that normally fills up the end of October.
INGREDIENTS:
Dry:5 cups rolled oats2 cups chopped pecans (or walnuts, if you prefer)¾ cup coconut chips (unsweetened)¼ cup sesame seeds1/3 cup shelled pumpkin seeds1 tsp. salt1 tsp. cinnamon½ tsp. ground ginger½ tsp. ground cloves½ tsp. ground nutmeg(optional) 2 Tbsp. ground flaxseedWet:½ cup agave½ cup olive oil (or coconut oil)¼ cup honey2 egg whites1 tsp. vanilla1 ½ cups dried cherries (I also like using cranberries or chopped figs)
INSTRUCTIONS:
1. Preheat oven to 350 degrees2. Combine dry ingredients in large bowl3. Whisk wet ingredients in medium bowl4. add wet to dry ingredients, stir to combine so that the dry ingredients are coated evenly5. Spread mixture out on 2 sheet pans, lined with parchment paper6. Bake until granola is an even toasty/caramel color, stirring every 30 minutes(total bake time varies per oven, mine is 2.5 hours)7. Remove from oven, sprinkle dried fruit on top, and let cool in baking pans
